Sunday Short Ribs

This is one of the staples of soul food. My mom and my grandma could both get down. I never said who made the best (and I never will). This is also one of the dishes that I really judge a soul food restaurant on.

Short ribs, like oxtails, can seem hard to cook, but I’ll show you that they’re easy. Follow these directions, just listen, and you’ll be cooking short ribs for people in no time. Only one thing makes your short ribs tough—not cooking them long enough.

Makes 6 to 8 servings

16 pieces meaty, bone-in beef short ribs (6 to 7 pounds)

Seasoning salt

Ground black pepper

Granulated onion for seasoning

¼ cup vegetable oil

8 garlic cloves, plus 2 tablespoons finely chopped

¾ cup finely chopped yellow onion

2½ cups cold water, plus 4 to 6 cups warm water

Two 1-ounce packets Lipton dried onion soup mix

1 tablespoon chicken bouillon powder

1½ teaspoons Kitchen Bouquet

1 cup all-purpose flour

Cooked extra-long-grain white rice or mashed potatoes (see this page) for serving
